South of Vindhyas at The Orchid Mumbai takes you to a culinary and aromatic sojourn to Chettinad. Master Chef Bala presents some of the most authentic recipes from this picturesque region of coastal Tamilnadu.

Chettinad is located in the coastal Tamil Nadu, spreading into the two southern districts- Sivaganga and Pudukottai. The enchantingly beautiful mansions and houses of the Chettinad are known for their unique architectural styles, which makes Chettinad a place of rare charm. Chettinad is also famous for its specialty cuisine delicacies.

The Chettiar community is non-vegetarian and their cuisine is distinctly different from the cuisine of traditional Tamilian Brahmins. Spicy in terms of both spices and chillies, the Chettinad cuisine is also one of the most aromatic in India.

Although the Chettiars are equally famous for their vegetarian preparations, their recipes of fish, meats and fowl are truly exceptional. There is a more than generous usage of oil, red and green chillies spices, peppercorns, bay leaves, cinnamon, cardamom, nutmeg and curry leaves that declare a rich and bold culinary statement.

Some of the starters on the menu include Eral Varuval (wok tossed prawns in chettinad spices), Karuveppillai Meen (curry leaves flavored grilled kingfish), Poricha Vavval ((Pomfert marinate with home made masala and fried) etc. The vegetarians can opt for Kuzhi Paniyaram (a chettinad delicacy of rice and lentil) or Karunakizhengu Vadai (yam kebab from the province of Tamil Nadu) and many more.

The non vegetarian main course dishes on the menu are Chettinad Meen Kozhambu (King fish cooked in spicy and tangy gravy), Nandu Curry Masala (home-style crab curry), Chicken Chettinad, Kadai Roast (pot roasted quail), Moollai Fry (brain fry).  The vegetarians can opt for Vellai Kuruma (a mélange of lima beans and vegetables in curd based gravy), Vendakai Mandi (okra cooked in rice water), Marakari Chettinad (peppery flavored mix veg curry) etc.

Various types of soups, daals and different preparations of rice such as Kozhi Biryani, (an authentic rice and chicken medley from chettinad region), Eral Biryani (a mélange of rice and prawn spiced with chettinad spices) along with a variety of Indian breads, Chapatti, Veechi Paratha, Iddiappam etc are also a part of the menu. There are few traditional drinks to give you authentic feel and end your meal with traditional desserts such as Pal Payasam (rich and flavorful rice kheer), Godhumai Halwa (broken wheat cakes), Adirasam (sweet rice doughnuts) etc
