According to Mr. Shabin Sarvotham,  Sr. GM, Grand by GRT, “Onam festival  will not only have a special Sadhya but will also  have  entertainment along with contests to make it unforgettable. Onam Sadhaya will consist of   a  heavenly feast of  25  authentic Kerala dishes specially prepared by Chef Sheetaraman & team. The menu will have charkara upperi, to nendra chips, the chamandi’s, ingii pooli, starters both veg and non veg, main course, choice of  staples like coin paratha, appam, nool puttu and desserts like Chakka pradhaman payasam.  Idea here is to present authentic  Kerala   food   with  a  modern twist. There will be different  techniques of presentation and will have a Kerala touch to it.  Food will be served with  spherification,  smoking,  flaming and nitrogen freezing,  which will add a whole new avenue to food gastronomy in the whole experience of the  Sadhya.

“The atmosphere that will give our customers a feel of  being in Kerala. Our team will be dressed as actors in blockbuster movie Premam. Mahabali in his attire would be visiting all the tables, all our waiters will be coloured like Puli. Photo booths and Kerala centric props are arranged.
